Carrot Cake Cookies (Healthy Back to School Snack)



Last month ,while waiting for a Dr’s appointment, I saw this recipe in our local paper and knew it would be a perfect back to school snack for my kiddies. This week we started kindergarten and preschool for the first time!

Today we had fun making these after school. This recipe caught me eye because it calls for whole wheat flower, carrots, pinapple, and not too much sugar. Plus they taste great!

Carrot Cake Cookies

Start to finish: 25 minutesMakes: 30 cookies
1 cup white whole-wheat flour1/2 teaspoon baking soda1 1/2 cups rolled oats1 teaspoon cinnamon1 teaspoon dry ginger1/4 teaspoon ground cloves1/4 teaspoon ground nutmeg2 egg whites3/4 cup dark brown sugar1/4 cup vegetable or canola oil1/4 cup drained crushed pineapple1/2 cup fat-free milk2 teaspoons vanilla extract1 cup raisins1 cup grated carrots1/2 cup chopped walnuts
Heat the oven to 375 F. Lightly coat 2 large baking sheets with cooking spray.
In a medium bowl, combine the flour, baking soda, rolled oats, cinnamon, ginger, cloves and nutmeg.
In a second medium bowl, combine the egg whites, brown sugar, oil, pineapple, milk and vanilla.
Add the liquid ingredients to the dry ingredients, then stir to combine. Stir in the raisins, carrots and walnuts.



























Drop by the tablespoonful onto the prepared cookie sheets, leaving 2 inches between them. Bake for 12 to 15 minutes, or until golden around the edges and slightly firm to the touch.
Nutrition information per cookie: 100 calories; 30 calories from fat (28 percent of total calories); 4 g fat (0 g saturated; 0 g trans fats); 0 mg cholesterol; 17 g carbohydrate; 2 g protein; 2 g fiber; 30 mg sodium.









Perfect with some cold milk!!



So here we are on the first day of school....I was a teary mess dropping off my son. I think because kindergarten feels so official and old. My daughter only goes two days a week so I can handle that time alone! Amazing what you can acomplish sans kids....









Yes I know I spelled kindergarten wrong in the photo...dang! Looks like I need to go back to school! Still cute though :)





These days are flying by fast so I'm trying to savor every second...

Yummmmmmmmmy! Carrot cake is my fave cake so I am going to have to try these. Or maybe I shouldn't-I've a feeling I'd eat them all way too fast. ;)
